This coffee originates from Ethiopia’s famed Guji and Sidama regions – areas celebrated for their complex and fruit-forward coffees. It is grown at 1700–2100 meters above sea level. These beans are a blend sourced from community producers, primarily in the Guji Zone (with beans from the Gerba Doku and Harsu Wokilo stations) plus a small addition from a neighboring Sidama station. These farms cultivate Ethiopia’s indigenous “heirloom” cultivars, a mix of ancient Arabica varieties native to the region. After harvest, the coffee was processed in two styles: roughly two-thirds natural and one-third washed. The natural-process beans were sun-dried with the fruit intact, concentrating fruit flavors, while the washed portion was fermented and rinsed, contributing floral brightness.
Once the blend was crafted, it underwent decaffeination through the Swiss Water Process. This chemical-free method uses pure water and time to gently remove the caffeine while preserving the coffee’s flavors.
From the start, a ripe peach aroma underscored by brown sugar rises from the cup. Subtle spiced rye notes also emerge. Sipping this coffee brings out floral and subtle herbal flavors. There is a balance of mild sweetness and acidity. The mouthfeel is tea-like - light-bodied and silky - making each sip gentle yet engaging. The finish is soft and clean, with just a whisper of bitterness.
