A washed Guatemalan coffee from Huehuetenango’s high ridgelines offering flavors of demerara sugar, ripe fruits, and cinnamon over a juicy, medium-full body.

Rancho Las Vegas sits above the town of Tectitán in southern Huehuetenango, where producer Silvestre Velasquez tends a 1.5-hectare plot at 2,000 meters above sea level. The farm’s height and the region’s warm Tehuantepec winds slow ripening and protect the coffee from frost, concentrating sweetness and acidity in dense beans. Silvestre plants a field blend of Bourbon, Caturra, and Catimor which are harvested together - a mix that provides both cup quality and agricultural resilience.

The farm is a small operation and all the coffee is hand picked, hand pulped and washed right there. The crop undergoes a relatively long 48-hour fermentation before a careful sun-drying on patio. This slow, even approach helps ensure clarity in the cup and locks in the coffee’s lively structure.

In the aroma, look for demerara brown sugar, vanilla, and a dusting of cinnamon with a light floral lift. The first sips bring crisp apple and ripe plum, a hibiscus-like red-fruit tang, and a light cocoa undertone. Body is medium-full and juicy with balanced sweetness and acidity. Wrapping up the experience is a pleasantly strong, medium-to-long finish with fruit flavors fading, then cinnamon, and finally cocoa.

This coffee has been roasted medium-light to keep the orchard fruit and brighter flavors while also developing body and caramelized sugar depth. The result is a cup that feels lively yet grounded - lush fruit and sweetness combined in a drink that’s worth having again and again.
