This coffee comes from Finca Samaria, a family-run farm in Belén de Umbria (a municipality in Colombia’s western Andes). The farm was established in the 1930s by Gerardo Escobar Mesa and Enriqueta Ceballos. It has remained in the same family for four generations. Sitting at 1,600 meters elevation, Finca Samaria cultivates several Arabica varieties - including Caturra, Typica, and the Variedad Colombia hybrid. This legacy of experience and dedication to quality farming results in coffee that does a splendid job at showcasing the region’s character.
At harvest, ripe coffee cherries are depulped and washed. Samaria then uses a short, carefully timed fermentation (~12 hours) to break down the sticky fruit mucilage before drying in the sun, all which leads to clarity and sweetness in the cup.
Once the green coffee is processed and dried, it’s sent for decaffeination at Descafecol in Tolima. There, the beans are decaffeinated using the Sugarcane method which uses ethyl acetate derived from sugarcane molasses. This method gently removes about 97% of the caffeine from the beans while preserving the coffee’s sweetness and flavor.
Aromas of warming cinnamon and molasses rise from the cup. These are joined by caramel on the palate along with flavors reminiscent of fresh-baked banana bread, lightly-toasted walnuts, and a subtle note of vanilla. The coffee has a medium body with comfortable richness - a clear sweetness but not cloying. The finish is medium in length and pleasantly mild.
Colombia Samaria EA Decaf is roasted to a medium level, aiming to highlight its inherent flavor while building body and rounding out the velvety sweetness. It’s a classic Colombian in nature: comforting, balanced, and quietly nuanced.
