Built in 2016 at 1,500 meters above sea level, the station receives ripe coffee cherries from around 400 smallholder farmers, with surrounding farms reaching 1,800 meters and higher. Gaseke is a relatively small station focused on meticulously-prepared specialty lots, and its position provides the drying tables with ample sunlight for consistent, controlled drying.\u003c\/p\u003e\n\u003cp\u003eThis lot is made up of Bourbon cultivars, which dominate Rwanda’s coffee fields and are admired for their quality at high elevations. After harvest, the cherries are spread across tables and sorted by hand, then put in clean water tanks so less-dense fruit can be separated before pulping. The coffee ferments for 12–18 hours, is washed clean, and then dries in thin layers on raised beds for roughly two weeks. Throughout drying, workers repeatedly turn and sift the parchment while removing visible defects. This labor-intensive process helps keep the finished lot clean and uniform.\u003c\/p\u003e\n\u003cp\u003eOn the nose, stewed peach and turbinado sugar are joined by black tea and a touch of nutmeg. The palate finds raspberry, lemon and orange peel over a combination of milk and bittersweet chocolate undertones. The coffee is light-to-medium bodied with a gently juicy quality. Mild sweetness balances an acidity that becomes more noticeable as the cup cools. A subtle black-tea character adds suede-like tannic structure without becoming rough or overly drying. The finish is medium-long, with chocolate, citrus peel, and red fruit lingering.\u003c\/p\u003e\n\u003cp\u003eThese beans are roasted with the philosophy of balance in mind.
